Low Carb Oatmeal, via My PCOS Kitchen
Patty says
Thank you for this recipe! I tried it this morning and I loved it. Fixed exactly as written and topped with one packet of Spenda and 1/8 cup fresh blueberries. I have Type 2 Diabetes and love oatmeal. Unfortunately, oatmeal sends my blood sugar soaring. I have been trying alternative recipes trying to find something that I could eat that would not raise it and still give me that creamy warm cereal taste. This was it! My blood sugar was 5 points less than it was before I ate this along with 2 strips of turkey bacon. I am so grateful for your post.
Stacey says
Hi Patty, thank you for trying the recipe and for sharing your blood sugar results. It brings me joy to know this is helping you.
Patty says
Stacy, could I make 4 servings at once and store them in mason jars in the fridge until ready to eat? I would assume I could just heat them up in a bowl in the microwave. Could you please advise. Thank you.
Stacey says
Hi Patty, yes, I think that would work out great. It may get thicker overnight but can easily be thinned out with almond milk or water after reheating.
Tricia says
My hubby and I LOVE, LOVE, LOVE this hot cereal. We followed it exactly and opted out of the collagen. It is so filling and so tasty. We added a few blueberries and raspberries and a small bit of butter and WOW! Thank you for sharing this awesome recipe.
Stacey says
Thank you, Tricia, for trying the recipe and for your kind words 🙂
Craig says
Thanks so much for this recipe!
As someone who ate oatmeal or cream or wheat every morning for years and is now keto this is a great substitute. I used unsweetened vanilla almond milk and it turned out great. Added a few blueberries on top and it was delicious.
Stacey says
Hi Craig, you're very welcome. Thank you for trying the recipe and for your kind words.
Ann says
WOWIE!!! Who’d have thought? One of the things I miss is Porridge with yogurt. This is deliciously comforting. Had to use pumpkin seeds and whipping cream, it worked fine. Also added tbsp chia and hemp. So good!
Stacey says
Thank you, Ann, for trying the recipe & for sharing your substitutions with us! I love the pumpkin seed idea!
Bonnie says
Ah this was SO good and perfect for my oatmeal cravings! For those of you who take it camping, did you blend the dry ingredients before leaving and then add the milk and butter when camping?
Stacey says
Thank you, Bonnie, for trying the recipe & sharing your tips for camping.
Armand F Lattizori says
I drive a truck, that's exactly what I do. Mix all the dry and make it in the truck with milk, vanilla and butter. I absolutely love this cereal, so good and so good for you.
Stacey says
Thank you, Armand, so much for your kind words & for sharing your tips 🙂
Pearley says
I thought this was going to be gloopy, like most low carb porridges, but it was really good, and really satisfying. Where I live, we can buy a mix called LSA (linseeds,Sunflower and almond), already ground into a meal. It was so convenient to use. I didn't even use the measurements. I just add some and checked until it was the consistency i liked. thank you.
Stacey says
Thank you, Pearley, for trying the recipe and for your very kind words. I have never seen LSA before, but how convenient that would be to have it already mixed together. I am going to see if I can find that online. Thanks for letting me know about that.
Amy Digby says
Could not get the sunflower seeds pulverized enough. Created a problem with my intestines. I love a hot cereal. I eat low carb due to high sugar issues. I will try and figure out how to come up with a solution. I didn't have blueberries so I used sugar free jelly, it tasted good. j
Stacey says
Amy, I used a food processor to make them into a powder.
Patty says
Hi Amy, I don't know if this will help you, but I bought the Cusinart Nut and Spice Blender, and it grinds the sunflower seeds up till like almost powder. Much better than using a blender.
Dee says
Thank you for this amazing recipe! Cream of Wheat has always been my favorite cereal, hot or cold, and I've really missed it since being on a low-carb diet. I modified a few things in the recipe by using 3 tbl of coconut flour since I didn't have almond flour. I also used a 1/2 cup of almond milk and 1/2 cup of heavy cream. This was incredibly delicious and pretty much the same consistency of cream of wheat. I love how easy and quick it was to make, it took me longer to gather and measure the ingredients then to actually cook it haha. Thanks so much, this will be a lifelong recipe for me!
Stacey says
You're very welcome, Dee. Thank you for trying the recipe & for sharing your tips and ideas 🙂
Laine says
Delicious! This recipe is so good, but I did add some pink salt to it (like you would oatmeal) and I used Trader Joe's liquid stevia. Didn't measure, just added for taste. For one of the servings I added a small spoonful of TJ's peanut butter. So good!!! My question: Are the berries included in the carb count? It looks like they are but I wasn't sure. Thanks! Will be making this again!
Stacey says
Laine, yes, I included the berries in the carb count (which is where most of the carbs are from in the recipe.
DeAnna Choi says
So delicious!!! And truly creamy! I was blown away. I used Walnuts ground instead of sunflower as I didn’t have any and it worked! Thank you for sharing!
Stacey says
Thank you, DeAnna, Using walnuts is a great idea and they are a little easier to find!
Jackie Martin says
So glad I found this...it is very good. Easy to make and filling. I thought it tasted a little like oatmeal. I love the comment about taking it camping - great idea!

Stacey says
You're welcome, Jackie, I love the camping idea too and will do that next we go camping.
Linda says
Great recipe! My son can’t do almonds so I substituted 3 Tbsp coconut flour and a mixture of macadamia nut milk and hemp milk. Topped with raspberries. Yum!
Teresa Turner says
My husband has been missing his morning oatmeal and he said that this is a good substitute. I didn't have raw sunflower seeds so I substituted pumpkin seeds and it turned out wonderful. I will be making this recipe often in the winter.
Missy says
This came out very thin for me I’m still boiling it after about 10 minutes to hopefully thicken it! Help!!
Stacey says
Missy, you can add a little more flax meal to thicken. I changed the almond milk amount a little so people can thick or thicken as desired.
Skye says
I’m going camping with my family and we love a bowl of hot cereal for breakfast on chilly WA mornings. This Keto hot cereal is awesome...nutty and filling. It was perfect with blueberries and my morning coffee!

Sarah Shaqueur says
I make this recipe all the time! Cream of wheat is my favorite and I love having the alternative. Instead of the sunflower seeds I just use almond flour 5tbsp, coconut flour 4tbsp and flaxseed meal 2tbsp and the consistency is still wonderful. Quickest breakfast! Thanks so much!
Stacey says
Thank you so much, Sarah, for making the recipe all the time and for your kind words 🙂
Jessica Hill says
Do you think I could use ground flaxseed Instead of flaxseed meal? I can’t seem to find the meal locally. Could I buy the seeds and use my food processor and grind them up to a consistency not as fine as my ground flaxseed? That should work right?
Stacey says
I think it would work.
Jane says
I made this into an instant hot cereal for work by adding some heavy cream powder and a bit of sugar free vanilla creamer. When I am at work, I can just add hot water and let it sit for a minute until it thickens. I made a large batch, so I can keep it in an airtight container ready to go.
Stacey says
Thank you, Jane, for trying this and sharing your method of making it an instant hot cereal. Brilliant idea! 🙂
NJ Knopp says
Very pleased with this recipe! I have missed hot breakfast cereals and this is a great alternative to my beloved oatmeal and grits recipes! Used molasses for sweetener - just a touch - and 1/2 whole milk/1/2 heavy cream, as I prefer it over almond milk and like the added fat. Needed a touch of salt but fabulous with keto bread toast and a piping hot cup of coffee - so warming after feeding the animals in the cold! I'll be making this one regularly 🙂
Stacey says
Thank you so much, NJ Knopp, for trying the recipe and for your very kind words, suggestions & tips 🙂
Holly says
This is absolutely delicious!! I didn't have sunflower seeds so just ground up unsweetened coconut flakes and added 4 Tb. of that. It wasn't as thick as the picture but the flavor and texture was amazing. Thank you!
Stacey says
Thank you, Holly, you can add more almond flour to thicken if you're not using the ground sunflower seeds.
Gia says
Could I use psyllium husk powder instead of road seed?
Stacey says
Gia, you just use more almond flour to replace the sunflower seed meal. You can add a little psyllium husk powder if you like, just not too much.
Kari - Get Inspired Everyday! says

Anna says
Can you make a batch and keep it in the fridge?
Stacey says
Yes, Anna, I did that. I made a batch and stored in the fridge in a covered container. Just added a little water before reheating to thin it a little, as the fridge makes it get thicker.
Anna says

I'd love to know what the carb count would be without the berries. I don't have any and don't really want to buy some just for this recipe. But, HOLY COW, I can't wait to try this! Cream of Wheat was my favorite hot cereal ever! Thank you!!
Stacey says
Hi Debbie, it is 4g net carbs without the berries 🙂

Thank you, This is yummy. I switched the sweetner packets for Lakanto golden monk fruit added a little lakanto maple syrup and skipped the berries. I will try again with the berries. Next time I will grind the seeds more, I left then a little too chunky trying to avoid making a paste.
