Thank you for this recipe! I tried it this morning and I loved it. Fixed exactly as written and topped with one packet of Spenda and 1/8 cup fresh blueberries. I have Type 2 Diabetes and love oatmeal. Unfortunately, oatmeal sends my blood sugar soaring. I have been trying alternative recipes trying to find something that I could eat that would not raise it and still give me that creamy warm cereal taste. This was it! My blood sugar was 5 points less than it was before I ate this along with 2 strips of turkey bacon. I am so grateful for your post.

Stacy, could I make 4 servings at once and store them in mason jars in the fridge until ready to eat? I would assume I could just heat them up in a bowl in the microwave. Could you please advise. Thank you.

Hi Patty, yes, I think that would work out great. It may get thicker overnight but can easily be thinned out with almond milk or water after reheating.

As someone who ate oatmeal or cream or wheat every morning for years and is now keto this is a great substitute. I used unsweetened vanilla almond milk and it turned out great. Added a few blueberries on top and it was delicious.

I thought this was going to be gloopy, like most low carb porridges, but it was really good, and really satisfying. Where I live, we can buy a mix called LSA (linseeds,Sunflower and almond), already ground into a meal. It was so convenient to use. I didn't even use the measurements. I just add some and checked until it was the consistency i liked. thank you.

Could not get the sunflower seeds pulverized enough. Created a problem with my intestines. I love a hot cereal. I eat low carb due to high sugar issues. I will try and figure out how to come up with a solution. I didn't have blueberries so I used sugar free jelly, it tasted good. j

Thank you for this amazing recipe! Cream of Wheat has always been my favorite cereal, hot or cold, and I've really missed it since being on a low-carb diet. I modified a few things in the recipe by using 3 tbl of coconut flour since I didn't have almond flour. I also used a 1/2 cup of almond milk and 1/2 cup of heavy cream. This was incredibly delicious and pretty much the same consistency of cream of wheat. I love how easy and quick it was to make, it took me longer to gather and measure the ingredients then to actually cook it haha. Thanks so much, this will be a lifelong recipe for me!

Delicious! This recipe is so good, but I did add some pink salt to it (like you would oatmeal) and I used Trader Joe's liquid stevia. Didn't measure, just added for taste. For one of the servings I added a small spoonful of TJ's peanut butter. So good!!! My question: Are the berries included in the carb count? It looks like they are but I wasn't sure. Thanks! Will be making this again!

Do you think I could use ground flaxseed Instead of flaxseed meal? I can’t seem to find the meal locally. Could I buy the seeds and use my food processor and grind them up to a consistency not as fine as my ground flaxseed? That should work right?

I made this into an instant hot cereal for work by adding some heavy cream powder and a bit of sugar free vanilla creamer. When I am at work, I can just add hot water and let it sit for a minute until it thickens. I made a large batch, so I can keep it in an airtight container ready to go.

Very pleased with this recipe! I have missed hot breakfast cereals and this is a great alternative to my beloved oatmeal and grits recipes! Used molasses for sweetener - just a touch - and 1/2 whole milk/1/2 heavy cream, as I prefer it over almond milk and like the added fat. Needed a touch of salt but fabulous with keto bread toast and a piping hot cup of coffee - so warming after feeding the animals in the cold! I'll be making this one regularly 🙂

This was absolutely amazing. It tasted much better than cream of wheat. It is my favorite hot cereal of all time.

Can you make a batch and keep it in the fridge?

Yes, Anna, I did that. I made a batch and stored in the fridge in a covered container. Just added a little water before reheating to thin it a little, as the fridge makes it get thicker.

Can you use coconut oil in place of butter? I LOVED Cream of Wheat growing up, so I can’t wait to try this!

I'd love to know what the carb count would be without the berries. I don't have any and don't really want to buy some just for this recipe. But, HOLY COW, I can't wait to try this! Cream of Wheat was my favorite hot cereal ever! Thank you!!

Thank you, This is yummy. I switched the sweetner packets for Lakanto golden monk fruit added a little lakanto maple syrup and skipped the berries. I will try again with the berries. Next time I will grind the seeds more, I left then a little too chunky trying to avoid making a paste.
