    Chicken Bacon Cabbage Skillet is a paleo and low carb dish that has amazing flavor and is made in one skillet.

    This recipe starts on the stovetop and then goes into the oven, so be sure to use an oven-safe skillet. I use a cast-iron one like this one.

    My husband could not stop raving about this dish and how much he loved the flavor! He is not even fond of chicken, and usually gets disappointed when I make chicken of any kind.

    I think the bacon was the key to his love for this dish.

    My daughter does not like cabbage and demanded that I don't give her any. I put some of the cabbage on her plate anyway, and she ate it and proclaimed that she likes this kind of cabbage.

    My family can be so difficult sometimes! But they all gave this recipe top reviews!

    Chicken Bacon Cabbage Skillet

    Ingredients:

    Spice Rub:

    • 1 teaspoon thyme
    • 1 teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon sea salt
    • ¼ teaspoon black pepper

    Other Ingredients:

    • 5 to 7  pieces whole cut-up chicken
    • ½ a head of cabbage, sliced
    • 5 slices bacon
    • ½ a medium-size parsnip, sliced
    • ½ a medium onion, chopped
    • 4 cloves garlic, minced
    • ⅓ cup chicken broth

    Directions:

    1. Preheat oven to 375 F. In a small bowl add all the spice rub ingredients and stir.
    2. Add raw chicken pieces to a large mixing bowl and add the spice rub mix. Use tongs to toss chicken to coat in spices. Set chicken aside.
    3. Fry bacon in a large oven-safe skillet. Once cooked remove bacon and set on a plate with paper towels. Remove some excess bacon grease from pan, leaving some grease left for browning chicken. Chop bacon, and set aside.
    4. While the skillet is still on medium-high add chicken to the skillet and brown and sear the chicken on both sides until browned. Once browned, remove chicken from skillet and set on a platter. Set chicken aside (this will be baked in the oven later).
    5. While skillet is still on medium-high add cabbage to the skillet and stir. Add chicken broth and sliced parsnips and stir. Add chopped onion and minced garlic and stir. Add chopped bacon to the skillet and stir.
    6. Remove from heat, and place chicken pieces on top of the cabbage mixture in the skillet.
    7. Place skillet in the oven and bake for 45 to 50 minutes or until chicken is done.

      This is the best recipe that I have found on the internet. It was so delicious that I am going to make it again for Sunday dinner this weekend. Instead of thighs though, I used chicken breasts. The bacon made it taste so good as well.

      This was amazing! I can't use paprika or I subbed turmeric. And I'd had parsnips earlier in the week so I used apple. It was perfect. The sauce is amazing. Thank you this lovely recipe which will be a family favorite.

      I stumbled across this recipe tonight and I am thinking of making it,..my only problem is that I only have boneless skinless thighs. Do you think I should hold off on making it until I get some bone in, skin on chicken? Have you made this using thighs?

        I have used thighs with the bone-in & skin on, but I have not tried it with boneless skinless thighs

          I did it with bone in thighs. Cooked only for 25 minutes. Next time I will not place my cabbage, onions, bacon on the bottom of the skillet. I’ll keep those separate because I prefer my cabbage not cooked too much. The flavor is delicious. I’ll make again for sure.

      I was googling cabbage and chicken recipes. I usually make stir fry with these ingredients,but I was looking for something different. I found this recipe. It had bacon and I had bacon I had to use before expiring. So these 3 ingredients needed to be used up. I honestly have to say I did not expect this to taste so good! I would give it 5 stars! The vacon and cabbage mixture was delicious and the chicken had a lovely browning and was very tender. I used Chicken breast, since that's what I had. My husband loved it too. This recipe is a keeper! Thank you! I couldn't believe how low the calories were also. Thanks for a great recipe

        Leigh Ann, I am not sure that kale would be a good substitute, as I'm am not a lover of kale. I know it is super healthy, but I don't love it unless it is hidden very well, lol. Possibly you could make it without cabbage & serve with a side of sauteed kale??
