    Crock Pot Chile Verde 

    A paleo and low carb Crock Pot Chile Verde recipe that is a budget friendly crowd pleaser!

    Crock Pot Chile Verde Tacos, Easy paleo and low carb

    Crock Pot Chile Verde Tacos with Avocado Cilantro Lime Sauce is an easy, budget friendly, primal, paleo, and low carb meal that can be made with pork or chicken.

    To save time you can use a paleo friendly, store bought, salsa verde sauce, like this one, or Trader Joes salsa verde, or you can make my salsa verde from scratch: homemade recipe  I have done both, depending on how much time I have.

    The pork stew meat is very inexpensive, so it is very economical for serving large groups and gatherings. I always make this when we have company, and serve it with lettuce shells, zucchini tortillas, or over cauliflower rice.

    My guests always ask for the recipe and leave no left overs behind. The avocado cilantro lime sauce is ridiculous, really, it is addictive and you should double the batch so there is no fighting over it. Or is my crazy family the only one that fights over food?

    RECIPE AND DIRECTIONS BELOW:
    Ingredients
    • 2 lbs boneless, chopped, pork stewing meat, or chicken.
    • 3 Tbsp butter, divided or oil of choice for paleo.
    • 3 tbsp cilantro, chopped fine,and divided.
    • 1½ cups salsa verde, I use Trader Joes, but you could use this homemade recipe
    • 5 cloves garlic, minced and divided.
    • ¼ tsp sea salt.
    • 1 tbsp extra cilantro for garnish.

    Instructions
    1. Put crock pot on high and put two tbsps of the butter into crock pot and let melt.
    2. Add 4 of the minced garlic cloves and 2 tbsps cilantro to the crock pot and stir.
    3. Heat a large fry pan to medium high on stove top, and melt 1 tbsp butter in it.
    4. Add one tbsp mince garlic and 1 tbsp minced cilantro.
    5. Add cubed pork meat to fry pan and brown sears all side of pork until just browned not cooked through.
    6. Add pork meat and garlic cilantro butter to the crock pot.
    7. Add 1½ cups salsa verde to the crock pot and stir around.
    8. Cover crock pot and cook on high for 2 hours , then turn down to low for 3 to 4 hours more, or could cook on low for 6 to 8 hours.
    9. Serve in lettuce cups, or in grain free tortillas, or over cauliflower rice.

      I put a nice 2lb pork roast in the crock pot today using this recipe. I browned it first with Amish garlic and herb butter. Almost forgot the salsa Verde!! I pulled the roast into strips before putting it into the fridge. It tasted so good. I cannot wait to eat it tomorrow! I may make a soup out of the juices in the crock. Thank you!

      I made this tonight and it was fantastic. I can't believe how good it was! I browned pork in a cast iron skillet, skipped the butter and garlic and just added jarred garlic and chopped cilantro to Chi-Chi's Mild Salsa Verde.

      And I had sprinkled garlic powder on the pork before I browned it. 5 out of 5 stars!

      OK.. I'm not a big fan of cilantro... any other suggestions?

        Teresa, I guess you could leave the cilantro out, although the salsa verde may contain cilantro as well. You could switch to a red salsa that is cilantro free and just use garlic and butter for the pork leaving out the cilantro. Does cilantro taste like soap to you? I have friends that say it tastes like soap.

      This is super easy and super delicious! I put it over cauli-rice to bulk the meal up a bit. The avocado cream sauce to go on top is AMAZING!! How have I lived this long without it?? Thank you for the great recipes!
