This was inspired by my Low-Carb Pumpkin Bagel recipe on this site.
Ingredients
- 2 cups Almond Flour, blanched
- ¾ cup Plain Full-Fat Greek Yogurt (unsweetened)
- ⅓ cup shredded Mozzarella Cheese (not fresh)
- ¼ teaspoon Xanthan Gum *optional
- 1 Small Egg, beaten (for egg wash)
Optional Garnish Ideas
- ½ tablespoon Everything Bagel seasoning *optional or
- ½ tablespoon Poppy Seeds *optional or
- ½ tablespoon Dried Minced Onion *optional
- ½ tablespoon Sesame Seeds * optional
Instructions
Preheat oven to 350℉ (180℃) and line a baking sheet with parchment paper or a silicone baking mat.
Add almond flour, shredded mozzarella cheese, and xanthan gum in a medium-sized mixing bowl. Stir until combined
Add Greek yogurt and use a fork or pastry cutter to mash and mix.
Mix until a sticky dough forms.
Lightly rub a tiny amount of olive or avocado oil into your hands to help prevent sticking.
Separate the dough and form into 4 dough balls.
Take a dough ball into the palm of your hand and use your thumb to press all the way through the center of the ball to form a hole in the center.
Release your thumb from the center. Place the bagel on the prepared baking tray and repeat with the remaining dough balls.
Using a pastry brush, brush the beaten egg wash over the tops of the bagels.
Sprinkle with optional spices or garnishes, or leave plain.
Bake for 33 to 36 minutes or until the tops of bagels are golden brown. Remove from the oven and let the bagels cool on a rack for at least 12 minutes before cutting them in half.
Slice, serve & enjoy.
Hint: Use a whole beaten egg for the egg wash so bagels will have a slightly crisp brown outside and a soft bread inside. Be sure to let the bagels cool for 12 minutes before slicing them in half.
