I used the silicone muffins cups to make the chocolate shell cups as they are so non-stick that after freezing the chocolate until firm, you can peel the muffin cup right off the chocolate cup.
You can also garnish these little mousse cups with a single low-carb berry (raspberry, blackberry, or strawberry). I also added a small sprig of mint for an extra fancy touch to each dessert.
My husband and kids felt like they were eating a gourmet restaurant dessert, and little did they know it is low carb and was thrown together in only a few minutes.

I also used a piping bag with a frosting tip to easily pipe the mousse into the chocolate cups to make the mousse look a little extra pretty.
But, you can also spoon the mousse into the cups, skip the piping bag if you're in a hurry, or don't own a piping bag.

You can use a candy mold or regular muffin pan, but you should lightly grease them before using so removal will be a little easier. You may also need to use a butter knife to loosen and remove from a muffin pan.
You can use unsweetened baking chocolate and use a low-carb sweetener to taste instead of sugar-free chocolate chips.
You can use cacao in place of the cocoa powder in the recipe.
Store the remaining mousse cups in a covered container in the fridge for up to 4 days.

Easy Keto Chocolate Mousse Cups
Ingredients

Chocolate Mousse
- 3 ounces Full Fat Cream Cheese softened
- ½ cup Heavy Cream
- 1 teaspoon Vanilla Extract
- ¼ cup Low Carb Powdered Sweetener
- 2 tablespoon Cocoa Powder unsweetened
- ⅛ teaspoon salt
Instructions
- Melt the chocolate chips in a metal or glass bowl over boiling water in a sauce pan or in the microwave on “melt” setting. Stir and melt until chocolate chips are melted.
- Pour 1 ½ tablespoon of melted chocolate into a silicone muffin cup. Tilt muffin cup around until most of cup is covered or use a spoon to spread chocolate over the inner muffin cup. Repeat on all 8 muffin cups.
- Place muffin cups on a baking sheet and put into the freezer and freeze for 15 to 20 minutes or until solid.
- Place cream cheese in a large bowl and beat using an electric hand mixer or stand mixer on medium until fluffy.
- Turn mixer to low speed and slowly add heavy cream and vanilla extract. Add low carb powdered sweetener, cocoa powder, and salt. Keep mixing until well incorporated. Scrape sides and continue mixing.
- Turn mixer to high, and mix until fluffy, about 1 to 2 minutes more.
- Remove muffin cups from the freezer and peel off the silicone cups from the chocolate.
- Using a spoon or a piping bag with frosting tip, fill chocolate cups with the creamy mousse. Garnish with an optional raspberry.
- Serve immediately. Any leftover mousse cups should be store in a covered container in the fridge.
