The Base Chip Ingredients
The Spices for three different flavors
1. Plain Cottage Cheese Chips
- 1 cup Full-Fat Small Curd Cottage Cheese
- ½ cup shredded Cheddar Cheese
- ⅛ teaspoon Black Pepper
- ¼ teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- ⅛ teaspoon Salt
2. Sour Cream & Onion Cottage Cheese Chips
- 1 cup Full-Fat Small Curd Cottage Cheese
- ½ cup Shredded Cheddar Cheese
- ½ tablespoon full-fat Sour Cream
- ½ teaspoon Onion Powder or more to taste
- ¼ teaspoon Garlic powder
- ⅛ teaspoon Salt
3. Chili Lime Cottage Cheese Chips
- 1 cup Full-Fat Small Curd Cottage Cheese
- ½ cup Shredded Cheddar Cheese
- ¼ teaspoon Garlic Powder
- ½ teaspoon Chili Lime Seasoning or more to taste

Instructions
Choose which flavor chip you want to make and gather the ingredients. Add 1 cup of full-fat cottage cheese and ½ cup of shredded cheddar cheese to a medium-sized bowl. Stir until combined
Add ½ tablespoon sour cream if making the sour cream and onion flavor (omit sour cream if making the plain or chili lime flavor).
Add the listed spices for the flavor of the chip you’re making.
Mix together thoroughly.
Spoon teaspoons of the mixture about 3 inches apart onto a square piece of parchment paper that will fit in your microwave & you will need to cook these in separate batches as I could only fit about 9 chips (but 6 chips or less would work better) at a time in my microwave.
Flatten each cottage cheese mixture mound lightly with the back of the spoon (don't flatten it too thin). Carefully place parchment paper with the flat cottage cheese mounds into the microwave.
Microwave at half power (50% power) for 3 minutes. When done, the chips should look dry and lightly browned. If they look wet or runny, continue to heat in 30-second increments at full power until slightly browned and have a dry texture.
It took almost 4 minutes in my microwave, but it could take 5 or more in some microwaves. Sometimes the chip may still run together, and that is okay as you can easily break them apart once they are done and hardened.
When chips are done, remove parchment paper from the microwave and let them rest for 2 minutes to harden. Repeat the process for the remaining batches.
Carefully peel the cottage cheese chips from parchment paper and serve immediately.
Hint: You can also make smaller batches of chips or fewer servings by cutting the ingredient amounts in half or thirds.

Can I use non fat cottage cheese?

Hi Penny, I have not tried non-fat cottage cheese, but I believe you need use at least low-fat cottage cheese for the recipe to work best.

I tried both types of cottage cheese. Very best was a good quality farm made full fat cottage cheese. Low fat was worst. It was awful and didn't seem to dry up properly. Remember this is a keto recipe and thus needs to be full fat for the diet.

Would Parmesan cheese work instead of Cheddar? Does the cottage cheese need to have the stabilizing additives in it, like guar gum or carrageenan (Trader Joe's) or can I use cottage cheeses without additives (Daisy, Good Culture)?

Cindy, Shredded Parmesan does work in the recipe. I've used Good Culture & the more generic cottage cheese brands & both work, but the more natural cottage cheese does spread out more as it cooks so it needs more space apart to not run together and will not maintain a round shape. They tastte the same and can be broken apart once dry if they run together.
