    Ingredients

    The ingredients for making ketto orange cranberry mufiins.Pin

    Dry Ingredients

    • 1 ¾ cups Blanched Fine Almond Flour
    • ¾ cup Granulated Low-Carb Sweetener
    • One tablespoon of Baking Powder
    • ¼ teaspoon Salt

    Other Ingredients

    • 1 cup Cranberries fresh or frozen
    • Three Eggs
    • ½ cup full-fat Sour Cream or plain Greek Yogurt 
    • Six tablespoons Butter, melted
    • Two tablespoons of Orange Juice, freshly squeezed, use a citrus juicer
    • Two teaspoons of Orange zest, use a citrus zester or microplane
    • Two teaspoons of Orange Extract
    • ½ cup Sugar-Free White Chocolate Chips * optional

    Instructions

    Mixing the dry ingredients.

    Whisk the dry ingredients in a large bowl and break up any clumps. Set aside.

    Chop the cranberries and set aside.

    Mixing the wet ingredients.

    Whisk together the eggs, yogurt or sour cream, melted butter, orange juice, orange extract, and orange zest in a second large bowl until smooth.

    Combine wet and dry ingredients.

    Add the dry ingredients to the wet ingredients and mix togetther until fully combined.

    Fold in cranberries.

    Gently fold in the chopped cranberries.

    Covering and letting the batter rest.

    Cover the bowl with plastic wrap and let the batter sit at room temperature for 20 minutes or in the fridge overnight.

    Prepare muffin pan.

    Preheat the oven to 400℉ (200℃). Line a standard muffin pan with paper baking cups or grease a silicone pan.

    Add batter to the muffin pan.

    Fill each muffin cup about ¾ full with the muffin batter using a large spoon.

    Adding the choocolate chips.

    Gently press the white chocolate chips into the tops of the muffin batter in each cup.

    Bake the muffins.

    Bake for 18-22 minutes until golden and a toothpick inserted in the center comes out clean.

    Remove muffins from the oven.

    Let cool in the pan for 10 minutes.

    Cool on wire rack.

    Transfer the muffins to a wire rack to cool. Serve.

    Hint: Covering the muffin batter bowl with plastic wrap and letting it sit at room temperature for 20 minutes or in the fridge overnight allows the batter to hydrate and for the flavors to intensify.

    Substitutions

    While our keto orange cranberry muffins are already delicious as is, you can always experiment with variations and substitutions to suit your taste preferences. Here are a few ideas to get you started:

    • Add nuts or seeds- For an extra crunch and flavor, you can consider adding a handful of chopped walnuts, pecans, or pumpkin seeds to the muffin batter. They will add a nice texture and complement the tanginess of the oranges and cranberries.
    • Swap cranberries for other berries- If cranberries aren't your favorite or you can't find fresh or frozen ones, you can easily swap them out for other berries like raspberries or blackberries. 
    • Try a different citrus- While orange zest and juice give these muffins a refreshing flavor, you can experiment with other citrus fruits like lemon or lime. Each citrus fruit will bring unique tanginess to the muffins, allowing you to create different flavor profiles.
