Ingredients
Chicken:
- 3 large chicken breast halves, boneless, skinless
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- ½ tablespoon avocado oil or olive oil
The Filling:
- 3 oz cream cheese, softened
- 1 tablespoon sour cream or mayonnaise
- 2 garlic cloves, minced
- ¼ teaspoon salt
- ½ teaspoon garlic powder
- ½ cups baby spinach leaves, chopped
- ½ cup mozzarella cheese
- 3 tablespoon parmesan cheese
- 2 slices cooked bacon, finely chopped

Instructions
Preheat oven to 400℉(200℃). Line a baking sheet or grease an oven-safe pan. Combine cream cheese, sour cream or mayonnaise, minced garlic, chopped spinach, chopped bacon, Parmesan cheese, salt, garlic powder, and ¼ cup of mozzarella cheese in a medium bowl.
Mix until combined.
Cut about 5 deep slits widthwise in the chicken, being careful not to cut all the way through the chicken breasts.
Place chicken on the prepared baking sheet or pan.
Fill all the slits in the chicken with the cream cheese-spinach-bacon mixture.
Sprinkle stuffed chicken with salt, black pepper, paprika, and remaining ¼ cup Mozzarella cheese. Place on the prepared baking sheet. Drizzle the oil over the top of the chicken breasts.
Bake for 30 to 35 minutes or until chicken is cooked through.
Hint: Be careful not to cut all the way through the chicken breasts when making the slits.
Storage
Store the cooked stuffed chicken in a sealed container in the fridge for up to 4 days.
