Line a baking tray with parchment paper or a silicone mat.
Set aside.

In a medium bowl, add yogurt and peanut butter.

Whisk together until creamy. If needed, stir in optional stevia or monkfruit.

Spoon two equal amounts of the yogurt mix onto the prepared tray in round shapes about 3 inches apart.

Press a popsicle stick into each yogurt pop. Freeze for 45 minutes or more until firm.

Add the chocolate chips to a glass bowl and heat in the microwave at 30-second increments, stirring in between, until melted.

Use a knife to loosen bars from the sheet.

Drizzle the chocolate over the frozen yogurt bars.

Sprinkle with chopped nuts and return to the freezer for 10 minutes or more to solidify the chocolate.

Use a knife under the bars to loosen before lifting off the tray. Serve.
If the bars have been frozen for hours or longer and are too hard, let them defrost for several minutes at room temperature before eating.
Hint: Slide a knife underneath the frozen bar to loosen it from the lined tray before lifting it with the stick, as the stick could break off if lifted before loosening the bar.
Substitutions
- Peanut Butter - You can use creamy almond butter instead of creamy peanut butter.
- Chopped Peanuts - Use chopped almonds instead of chopped peanuts.
Equipment
Storage
Store the frozen bars in a sealed container in the freezer for up to 14 days. Be sure to defrost for several minutes at room temperature before eating, as once they are completely frozen, the bars can become very hard.
